Safer food, better business (SFBB) is a food safety management system (FSMS),
developed by the Food Standards Agency (FSA) working with caterers to
help small food businesses:

l Comply with the new food regulations.

Make food safely.
ü

Demonstrate how the food is made safely.
ü
l
Improve the business e.g. by wasting less food.
ü
l
Plan and organise food safety within the business.
Q. What does the new law
require?
Regulation (EC)
No 852/2004 on the hygiene
of foodstuffs
and the Food Hygiene (England Regulations 2006 (Effective from 1st January
2006) replaces the Food Safety (General Food Hygiene) Regulations 1995 and
the Temperature Control Regulations 1995.
Regulation (EC) No 852/2004 state that
all food businesses must implement food safety management procedures
based on Hazard Analysis and Critical Control Point principles (HACCP).
Flexibility allowed for small businesses
which SFBB used.
No requirement for any specific system.
The law also requires that food handlers
must be supervised and instructed and/or trained in food hygiene matters
commensurate with their work activity.
Those responsible for the development
and maintenance of the HACCP system or the operation of the relevant
guides must receive adequate training in the application of the HACCP
principles.
With some modification SFBB can be used
in medium sized businesses.
